Butcher's set

This set includes a cleaver and butcher's knife. Cleaver is hand forged from high carbon 9260 spring steel. After precise and careful hardening, tempering and annealing, the edge reaches Rockwell 60-62 (HRC). Final sharpening is done on a felt disc using chrome oxide compound to give the tool a razor sharp edge. A traditional mixture of beeswax, linseed oil and pine turpentine is used on the steel to provide an anti-rust finish.

 

Butcher's knife is hand forged out of a round piece of Swedish Elmax powder metallurgy steel. Uddeholm Elmax is a high chromium, vanadium- molybdenum - alloyed steel with high wear resistance, high compressive strength, corrosion resistance and very good dimensional stability.

 

After the blade is shaped it is grinded by hand to the smooth shape.

 

After the grinding is done, the knife is heated in a computer controlled oven to precisely 1080°C (1976°F) and then quenched in a circulated air quench. To reach the 61 HRC hardness for the blade it was been subzero treated for 2 hours at -80°C (-112°F) in dry ice. This is also called cryogenic hardening or deep cooling. The super cool temperatures transform the steel structure from austenite into martensite. Cryogenic hardening relieves some stress, raises the Rockwell hardness by 1-3 points and refines the internal grain structure of the steel. The knife is then annealed for 2 hours in a tempering oven of 220°C (428°F). 

 

The blade for butcher's knife is matted using a very smooth sand blast stream. The sand for this final abrasive is taken out of our local river-bed. Afterwards, the blade is smoothly polished with diamond polishing paste, giving the blade a satin finish. Afterwards the knife is honed to razor sharpness.

 

The handle for cleaver and butcher's knife are hand shaped out of a block of Malaysian hardwood - Merbau. Mosaic pins are made of stainless steel, brass, copper and nickel. Afterwards the handle is dyed, oiled with Tung oil and waxed with a beeswax.

 

The cleaver comes with a custom dyed, waxed and hand stitched leather sheath.
